Grapes harvested from cohesive vineyards managed exclusively under an organic regime, adjacent to the protected natural reserve of Drieňová hora. Each variety was vinified separately, using spontaneous fermentation, and the wines matured for 24 months on lees in used oak barrels. After blending the varieties, the wine rested for an additional 6 months in oak barrels. The wine was not clarified or filtered, and bottling was done manually using gravity.

The wine is made using traditional methods, without the use of selected yeasts, enzymes, or other additives.

The name of the wine, Somlyó (pronounced as Šomjó), pays tribute to its terroir. In the local dialect, Somlyó means Drieňová hora, which is both a natural reserve and the birthplace of this outstanding wine.

The family-owned winery Mátyás produces all its grapes for their wines exclusively under the organic regime. After several years of a transitional process, they received official certification in 2014. Mátyás family winery is one of the three founding members of the association Autentista Slovakia.

Mátyás Pincészet, a family-run winery founded in 2003, is nestled in the charming village of Nová Vieska – Kisújfalu, in the heart of the South Slovak wine-growing region. Spanning over 12 hectares of vineyards, they grow a diverse range of grape varieties including Feteasca regala, Sauvignon blanc, Traminer, Welschriesling, Pinot blanc, Chardonnay, Riesling, Pinot noir, Blaufränkisch, and Dunaj.

Their vineyards, located on the southwestern slopes of Drieňová hora in Nová Vieska, benefit from a unique location, only 5 kilometers away from the Danube river. This allows for a steady flow of fresh, healthy air throughout the year, which supports the biological protection of plants.

The soils of their ropes consist of limestone, sandstone, loess, and brown forest soils. The thin top layer of soil forces the roots to delve deeper into the earth, producing grapes with a unique terroir character.

Mátyás Pincészet is proud to be organically certified and practice biodynamic elements in their vineyards. They use only natural yeasts and old oak barrels in the cellar for aging, along with minimal amounts of sulfur during bottling. Their work philosophy is to achieve a harmonious balance between nature and the universe.
