Pinot Noir, Pinot Blanc & Pinot Gris
Grapes harvested from integrated vineyards managed exclusively in an organic regime, adjacent to the protected natural reserve of Drieňová hora. Spontaneous fermentation for 3 weeks, with Pinot Noir and Pinot Gris fermenting in whole-cluster fermentation vessels, layered with crushed Pinot Blanc. Subsequent vinification in older oak barrels, filled without clarification and filtration. Total sulfur content up to 25 mg/l.
The family winery Mátyás produces all its grapes for its wines exclusively in the Bio regime. After several years in a transitional regime, official Bio certification was granted in 2014. Mátyás Family Winery is one of the three founding members of the Autentista Slovakia association.
Matyaswines: “In every wine, we strive for a deep connection to nature and authenticity with traditions. In this wine, we returned to the ‘all together’ method. Well, it wasn’t entirely freestyle. The common fermentation of our three Pinots – Blanc, Gris, and Noir – resulted in this interesting creation. But to impart a bit of fruitiness to the bottles, we decided not to overload our press, and 2/3 of the must contained whole clusters of these varieties. It’s worth trying at least once. And maybe twice.”
White, rosé, orange, red? The color of this wine doesn’t precisely fit into any of the generally known four categories. The combination of white and blue varieties creates a specific hue, somewhat reminiscent of mature sherry (of course, if blue varieties do not dominate in the wine, then the color is typically red). In the glass, a medium-intensity cherry-red color with brownish reflections. The aroma is dominated by red fruit with hints of pits and red berries, followed by dried herbs and minerals. Medium-bodied, discernible tannins, freshness, and juiciness supported by fine acidity. A long-lasting finish.
