60% Alibernet, 40% Dunaj
The grapes were harvested from the Kalvária and Góra vineyards, from 19 and 8-year-old vineyards with sugar levels of 25.00 and 22.00 Brix. Alibernet underwent a 2-day maceration, Dunaj for 14 days. Spontaneous fermentation took place with skins in 700-liter vats, and the wine subsequently matured for 11 months on lees in used barrels.
The wine was made using traditional methods without the use of selected yeast, enzymes, or other additives. It was not clarified or filtered, with minimal sulfite addition, and a total sulfur content of only 26 mg/l.
Through skillful vinification, certain ‘flaws’ of both varieties were eliminated, and their strengths came to the forefront. A mere 2-day maceration of Alibernet prevented its youthful harshness and a certain lack of structure, while with Dunaj, fresh and vibrant fruit took center stage, overshadowing the overripe jammy notes and tiring heaviness.
CHARACTERISTICS
Dark, opaque ruby with a purplish rim; a slight haziness upon tilting the glass indicates unfiltered filling. An elegantly fuller aroma gradually unfolds, with dark fruit, notes of sour cherries, cassis, spices, and minerals on the nose. A medium to full, juicy, meaty flavor with excellently integrated fresh acidity that lightens the overall experience. Surprisingly pleasant drinkability, with the 14% alcohol level almost imperceptible, enhanced by velvety tannins and a long, lingering finish. An excellent wine that we can confidently predict will achieve success!
